WHAT'S A GALLEY? All ships have a galley, it is the part of the ship where all the food is prepared. The galley is one of the only places on a wooden ship you'll find a naked flame when the cannons aren't being used. Food was often pretty poor for the crew on most voyages. The galley kept all the best food for the Captain and officers.
WHAT'S A SPICE? Apart from obvious treasures shipped around the world like gold and silks, easy money could be made seizing and redistributing spices. Pepper was highly valued and even today spices are shipped around the world to satisfy gourmet palates.

        THE SHIPS GALLEY

This is the most crucial part of any ship, after all a good crew sails on it's stomach. Besides it would be an unwise Captain that let scurvy get to his crew or the biscuit barrel empty. So on to pies, one of my favourite foods.

 Pies

What's nice about pies is their taste,

And the finest are not made in haste.

So I confess love

For meat, gravy and stuff,

 Wrapped up in a gold pastry case.

    Pies are a good food for certain but they were not always available. Because provisioning a ship  was an expensive business back then any food that could be gathered en route would have been taken aboard to supplement mostly a poor diet.

Notes on Zen Fishing II

I stack coral
in the rising tide,
until the wall
of  razor edged maze
spirals out and up
to trick the sea.

As the tide turns
I chase a  fish back
into the artifice,
watching as it
dives and swims
around and in

until lured with as
much care as  I
placed every piece
of coral there
it's in the centre,

with  its tail
leaving a cloudy trail
all the way to
my open hand.
